While studying at TCU, Chelsea gained her culinary experience with famed bakeries recognized by The Food Network and My Fair Wedding with David Tutera. What began as selling cupcakes and cookies to groups and students, has recently culminated in the launching of her own online-based confectionery catering business, Chellie B’s.

Chelsea also currently works with Potbelly Sandwich Works as a part of their Management team. While using the skills that she learned within the Food Management program, Chelsea has been able to lead store associates and run a successful shop. She is on the fast-track to store management and is hoping to move up the corporate ladder to one day own her own shop, or even manage various districts for the company.

Caroline, a recent graduate, will be working as an intern for the US Senate Committee on Agriculture, Nutrition and Forestry with a specific focus in nutrition policy. In addition, she will also be aiding senior legislative officials with basic office functions and other national nutrition interests such as the impact on food safety in relation to foreign acquisition of American food companies.

Her hope is that this position will enable her to help contribute to long-term sustainability while maintaining the integrity of evidence-based nutrition practices.

Eve is the owner of Nutriworks, a DFW-based nutrition consulting company focused on helping individuals learn how to use nutrition for performance. Taking her experiences as a personal trainer, triathlete and a CPD student, she has built a company that teaches athletes to “Eat to Train rather than Train to Eat”.

Minh-Hai operates Mindful Nutrition in Seattle, WA. A graduate of the Coordinated Program in Dietetics, Minh-Hai is committed to coaching others to live vibrant, healthy and balanced lives. She particularly enjoys helping others develop a more peaceful, enjoyable relationship with food, as an Intuitive Eating Provider.

Katie runs the online blog Fiber is the Future which highlights the health benefits of dietary fiber and its food industry following. In addition, she teaches an online nutrition course to over 56,000 students about health promotion and disease prevention.

When not tending to her blog or online course, Katie works as a Registered Dietitian and nutrition consultant in the San Diego and San Francisco, area.

Teresa, who runs the blog The Traveling RD, is a sought-after health professional whose nutrition expertise has been showcased in a variety of media venues, both nationally and regionally. Teresa has been awarded the Texas Academy of Nutrition and Dietetics Media Award for excellence in nutrition based media. As a media representative, during her tenure with the National Dairy Council, she was selected four times spanning nearly a decade as a National Media Ambassador.

She has completed hundreds of radio interviews, radio talk shows, newspaper and magazine interviews, television interviews, web interviews, cooking demonstrations, press conferences, speaking engagements and published several professional articles.

Connie is the New York Times bestselling author of The Sonoma Diet. Her other popular titles include The Sonoma Diet Cookbook and most recently The New Sonoma Diet. Apart from her work as an author, Connie is a consultant and spokesperson for the California Olive Industry and the International Olive Oil Council.

Since 1995, she has been the Nutrition Consultant and an Instructor at the Culinary Institute of America – Greystone, in St. Helena, CA. There she developed their Healthy Cooking Techniques courses, which focus on the Mediterranean, Latin American, and Asian cuisines

She has appeared on many television shows, including The View, TODAY Show, CBS Early Morning Show, and Fox and Friends, to name a few.
